Ingredients:
Dry Ingredients
1 cup Rolled oats, pulsed in a food processor 5-8 times
¾ cup Whole wheat flour
1 tsp Sea salt
2 tsp Baking powder
1 ½ tsp Cinnamon
2 tbsp Chia seeds
¼ cup Dried apricots, diced
Wet Ingredients
1 Large egg, room temperature
½ cup Honey
2 tbsp Coconut oil, warmed
1 ½ tsp Vanilla extract
Directions:
Mix dry ingredients (except apricots) in a large mixing bowl and set to the side. Combine wet ingredients and whisk until mixed thoroughly. Stir the wet ingredients into the dry ingredients gradually until well combined. Stir in the apricot piece. Cover bowl with plastic wrap and chill in refrigerator for 30 minutes. Preheat oven to 325°. Spoon onto greased cookie sheet and press down slightly with your fingers or a fork. Bake for 13-15 minutes and let cool before removing from cookie sheet.
